This was an exceptionally yummy cake! The recipe came from Tamasin Noyes' "American Vegan Kitchen."
This is a recipe from "Simple Vegetarian Pleasures" by Jeanne Lemlin. Actually, though, I've seen it in about a hundred cookbooks, as well. It's that recipe that you mix in the pan and then pour the icing over it.
This recipe was taken off the internet, and I had so-so results. The main problem was that it called for a 15 x 10 baking pan, and I crammed it into my 9 x 9 anyway. The cake part was still good (nice and moist), but there was far too much topping for the little cake.
